Chicken Meatballs
- 1 cup zucchini, chopped (about 1 zucchini)
- 1 cup carrots, chopped (about 2 carrots)
- ½ cup parsley, coarsely chopped
- 3 medium cloves garlic
- ¼ cup blanched almond flour
- 1 large egg
- 1 pound boneless skinless chicken breasts
- 1 teaspoon celtic sea salt
- ½ teaspoon ground black pepper
- ¼ teaspoon chili powder
- Preheat oven to 350°
- In a food processor, pulse together the zucchini, carrots, parsley and garlic
- Add almond flour, egg, and chicken
- Then add salt, pepper and chili powder and process until thoroughly combined
- Drop tablespoon sized balls of the chicken mixture onto a parchment lined baking sheet
- Bake meatballs for 20 to 25 minutes
- Serve

Baked Sweet and Sour chicken
Seriously the most tender chicken I've ever made. (I usually way overcook my chicken.)

- Preheat oven to 325 degrees F.
- Cut the chicken breasts into 1-inch pieces. Season with salt and pepper. Place the cornstarch in a gallon-sized ziplock bag. Put the chicken into the bag with the cornstarch and seal, tossing to coat the chicken.
- Wisk the eggs together in a shallow pie plate. Heat the oil in a large skillet over medium heat until very hot and rippling. Dip the cornstarch-coated chicken pieces in the egg and place them carefully in a single layer in the hot skillet.
- Cook for 20-30 seconds on each side until the crust is golden but the chicken is not all the way cooked through. Place the chicken pieces in a single layer in a 9x13-inch baking dish and repeat with the remaining chicken pieces.
- Mix the sauce ingredients together in a medium sauce pan and pour half over the chicken. (Reserve the other half for extra sauce.) Bake for 30-40 minutes, turning the chicken once or twice while cooking to coat evenly with sauce.
- Heat the remaining sauce in the pot at a simmer for 8-10 minutes until it reduces and thickens.
- Serve over hot, steamed rice.

Better Copycat Costco Chicken Bake
Ingredients for final bake
Roll out pizza dough until 1/4" thick and cut into 4 squares or rectangles. (The pizza dough recipe I use makes an 11" x 17" pizza dough so if you bought crust dough at the store it might be a different size, resulting in a different quantity of chicken bakes you can make.) In a medium mixing bowl, mix all ingredients together (except pizza dough, duh...) and spoon a quarter of the mixture onto each piece of dough. Roll up, leaving ends open somewhat as the rolls will lengthen as they cook. Sprinkle with shredded cheese. Bake at 425 F until lightly browned and you can hear the sauce inside sizzle. (If the end is still open it will start to bubble out a tiny bit.)

Chicken Tikka Masala

1/2 bag frozen peas and carrots
1/2 bag frozen cauliflower

3. In a large sauce pan, boil according to package directions 1/2 bag frozen peas and carrots and 1/2 bag frozen cauliflower. When done, drain and set aside.
3. While vegetables are boiling, heat 3 T olive oil in a large skillet over medium heat. Cook and stir 1 tsp cumin seeds until lightly toasted and aromatic, about 3 minutes. (If you're using ground cumin, wait until you add the onion.) Add 1/2 onion and 1 green chili; cook and stir until onion and chilis begin to soften, 4 to 5 minutes. Stir in 3 cloves garlic and 1 T fresh grated ginger and continue to cook until onion is browned, 15 to 20 minutes. Cook and stir 1 can diced tomatoes, 1 can tomato paste, and water (if needed) into onion mixture until tomatoes begin to break down and incorporate into the onion mixture, about 10 minutes.
4. Cook and stir 1 tsp garam masala, 1/2 tsp coriander, and 1/2 tsp tumeric into the tomato mixture. Mix in the cooked chicken and cooked vegetables, add 1 can coconut milk, and stir to coat. Cover and let simmer for 10 minutes. Season with 1/2 tsp salt and garnish with cilantro.
Amounts for a doubled recipe
1/2 cup plain yogurt
1 T + 1 tsp garam masala
1 T + 1 tsp paprika
1 tsp ground black pepper
1 tsp salt
1 tsp chili powder
1 tsp ground coriander
2 lbs chicken

1/4 olive oil
2 tsp cumin seeds
1 large onion
6 cloves garlic
2 T grated fresh giner
2 green chili peppers
2 cans diced tomatoes
2 cans tomato paste
2 tsp garam masala
1 tsp ground coriander
1 tsp ground tumeric
1-2 cans coconut milk
1 tsp salt
1 bunch cilantro for garnish

Russian Chicken

1 cut up fryer or 4-6 boneless, skinless chicken breasts
1 small bottle Russian Dressing (Anything red will do, like Catalina, but Russian is best)
1 envelope dry onion soup mix
1 small jar apricot jam, good and chunky
Place chicken in a 9 x 13" pan. Mix jam, dressing and soup mix together; pour over chicken. Bake at 400 deg. for 45-60 minutes, until chicken is done and mixture is bubbly hot. Periodically throughout the baking, I spoon some of the sauce over the chicken.

Ingredients
- 4 skinless, boneless chicken breast halves - cooked and diced
- 1 stalk celery, diced
- 4 green onions, chopped
- 1 Golden Delicious apple - peeled, cored and diced
- 1/3 cup seedless red or black grapes, halved
- 1/2 cup chopped toasted pecans
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon curry powder
- 3/4 cup light mayonnaise
Directions
- In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together. Serve! Tastes even better the day after it's made.

Slow Cooker Cilantro Lime Chicken
Ingredients:
1 (16 oz) jar salsa
1 (1.25 oz) package dry taco seasoning mix
1 lime, juiced (or 2 T lime juice)
3 T chopped fresh cilantro
3 pounds boneless, skinless chicken breast halves
Directions:
1. Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker and stir to combine. Add the chicken breast (cut them in half so they marinate and cook more evenly) and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.
Make into tacos with flour tortillas, shredded cheese, tomatoes, green peppers, onions, sour cream and avocados.

Chicken a la King (or The One with the Peas)

½ cup frozen peas
½ cup sliced mushrooms
2 Tb butter
2 Tb flour (3 Tb)
½ Tsp salt
1.25 cup milk
1 beaten egg yolk
1 ½ cup cooked chicken
2 Tb lemon juice
½ Tsp paprika
4 halves English muffins or 1 ½ cups cooked rice
In a sauce pan, melt margarine. Add flour and salt and mix well, keep stiring. Add milk all at once and mix continually with wire whisk until lumps are gone. Cook and stir till thickened and bubbly. Gradually stir ½ cup hot mixture into egg yolk (move by spoonfuls). Return all mixture to saucepan. Stir and cook over medium heat just until it returns to a boil. Add chicken, paprika, lemon juice, half cup frozen peas. Cook and stir for about 5 minutes so peas can cook.
Makes 4 servings.
