Chicken a la King (or The One with the Peas)


½ cup frozen peas

½ cup sliced mushrooms

2 Tb butter

2 Tb flour (3 Tb)

½ Tsp salt

1.25 cup milk

1 beaten egg yolk

1 ½ cup cooked chicken

2 Tb lemon juice

½ Tsp paprika

4 halves English muffins or 1 ½ cups cooked rice


In a sauce pan, melt margarine. Add flour and salt and mix well, keep stiring. Add milk all at once and mix continually with wire whisk until lumps are gone. Cook and stir till thickened and bubbly. Gradually stir ½ cup hot mixture into egg yolk (move by spoonfuls). Return all mixture to saucepan. Stir and cook over medium heat just until it returns to a boil. Add chicken, paprika, lemon juice, half cup frozen peas. Cook and stir for about 5 minutes so peas can cook.

Makes 4 servings.

Tenny Muffins


Ingredients

Dry ingredients

8 cups flour

3 cups sugar

3 T baking powder

2 tsp salt

2 tsp cinnamon

2 tsp nutmeg


Mix all dry ingredients and divide into 4 batches.

Wet ingredients for 1 batch (12-15 muffins)

1 cup milk

1 egg

2 ¾ cup muffin mix

½ cup oil (can substitute applesauce)

Bake at 400˚F for 13-16 minutes.

Variations

Add crushed almonds or mini chocolate chips for variety.

Honey Cornmeal bread for machines


Cheesy Potato Soup


4 Tablespoons butter
1 teaspoon salt
4 Tablespoons flour
2 1/2 cup milk
2 beaten egg yolks
3 large potatoes, peeled and diced
2 bouillon cubes
6 strips bacon, cooked and crumbled
1/2 onion diced (or 2 Tablespoons onion flakes)
1/2 cup Jack cheese, grated
2 teaspoons parsley
1/2 teaspoon garlic powder
salt to taste

In large pot cook potatoes in water and bouillon for about 20 minutes. While potatoes are cooking, cook bacon and diced onion in frying pan. Drain well. Drain most of the water off potatoes.

For white sauce: In sauce pan, melt margarine. Add flour and salt and mix well. Keep stiring. Add milk all at once and mix continually with wire wisk until lumps are gone. Cook and stir until thickened and bubbly. Gradually stir 1/2 cup hot mixture into beaten egg yolks (move by spoonfuls). Return all mixture to saucepan. Stir and cook over medium heat just until it returns to a boil.

In large pot, add potatoes, white sauce, bacon and onions, cheese, pepper, parsley, and garlic powder. Stir over low heat until cheese has melted and everything has blended. You may need to add more milk if mixture is too thick.

Boxcar Children's Campout Cornbread


9 servings

Ingredients

1 1/4 cups flour

3/4 cup cornmeal

1/4 cup sugar

2 teaspoons baking power

1/2 teaspoon salt

1 cup milk

1/4 cup vegetable oil

1 egg

Instructions

1) Preheat over to 400 degrees F.

2) Spray an 8" x 8" baking pan with no stick cooking spray.

3) Mix all the ingredients together in a mixing bowl.

4) Pour the mixture into the baking pan.

5) Bake 18-20 minutes or until a toothpick comes out clean when poked into the center. Remove from the oven.

6) Cut into squares and serve warm with margarine.

...or make them into Corn muffins

12 muffins

Pour batter into 12 muffin papers in a muffin pan. Bake at 400 degrees F for 14 minutes. Test with a toothpick.

Tuna noodle casserole



6 oz. egg noodles (wide or extra wide), cooked*
1 small can of tuna, drained and flaked with a fork
1 can cream of mushroom soup
1/2 cup milk
1 cup frozen peas, cooked
1/2 cup (or more) grated sharp cheddar cheese
¾ cup fresh bread crumbs cooked in 1 T. butter until slightly crisp**
¼ cup Parmesan cheese

1. Preheat oven to 350 degrees
2. In a large bowl, stir together first six ingredients until well combined.
3. Spread into a small greased casserole (8X8”) dish then sprinkle bread crumbs and Parmesan cheese evenly over the top.
4. Bake uncovered in a preheated 350 degree oven for 30 minutes and serve warm.

yield: 4-5 servings

Recipe notes: This recipe makes a fairly small casserole but it can easily be doubled if you have a large family or like to have lots of leftovers!

*Don’t overcook the pasta! Read the package for times and use a timer.

**If you don’t want to use fresh bread crumbs, use the seasoned dried kind from the store and cut the amount in half. Toss the seasoned dried bread crumbs in one tablespoon of melted butter before sprinkling over the top of casserole.

(There are MANY versions of this recipe…some people put onions, water chestnuts, celery in it.)



One-Dish Chicken and Rice Bake

Cambell’s 1 dish chicken and rice bake

1 can (10 ¾ oz.) cream of mushroom soup

1 cup water

¾ uncooked regular long grain rice

¼ tsp Paprika

¼ tsp Pepper

4 skinless boneless chicken breast halves

  1. In 2 quart shallow baking dish, mix soup, water, rice, paprika, and pepper.
  2. Place chicken on rice mixture, sprinkle with additional paprika and pepper
  3. Cover, bake at 375° F for 45 minutes, or until done.
  4. Serves 4
